Loving my vacuum sealer. Proper meat storage in the freezer finally. I'm trying to get into a habit of buying an extra Chuck roast when I go shopping - to vac seal and put j to the freezer. (Fridge freezer , but getting a chest freezer soon)
I just got one of these the other day! Haven’t taken it out of the box yet, nothing to vac up. As soon as I go shopping though.
My goal was to buy meat / veggies / berries / fruit etc on sale in bulk , and vac seal, and tuck it all into the chest freezer (buying soon). As well I wanted to freeze big jugs of drinking water - to take the load off the freezer motor, to ensure a good supply of emergency water and to keep the freezer and food extra icy frozen cold during heat waves and power outages.

Well, cooking is all about experimentation , and failures. Well I gotta admit tonight I had an EPIC cooking failure..... I had the idea that if I sautéed onions, garlic, celery, carrots, mushrooms, then liquified them in the blender , that it would produce a very intense flavour and thick gravy in my beef stew. Well, it sure smells good, tastes even better, but it looks like oil and water, blended into a brown foam..... even with the addition of a half bottle red wine and soup stock.... pics coming...
The beef browned nicely in olive oil with cumin , coriander, Himalayan salt, paprika, black pepper, savoury herbs. Added dark red wine. then added the blender full of sautéed mushrooms, carrots, onions, celery , garlic , herbs and broth. didn't turn out very appealing, but had very intense flavours. It was quite nice to dip bread into the greyish foamy goo I'll salvage the stew, I'll probably scoop out all the beef cubes,toss the blender veggie foam stock , add some vegetable broth and mix in rice
It might work better if you had less “goo”. Just a drizzle over the top of some meat, rice, and sautéed mushrooms would not be bad. It looks like your trying to eat baby food here. Long ago as part of a “Bushcraft/survival “ experiment we were given baby food to eat on the premise that it was highly nutritious in a concentrated shelf stable form. While a person could force it down the texture was just so off putting it made you want to gag. I could understand after that why it was so hard to get rugrats to not spew this stuff.
Yea salvaging the stew. Drained the foamy veggie gravy goo off the meat , added sautéed onions, broccoli and mixed it all together. very tasty adding grizzly po op
Daily smoothie for the drive to the truck yard. Afghan KEFIR (a type of probiotic culture yogurt, thick liquid form), 2 bananas, an apple, 5 berry compote (I normally use frozen blueberries, but ran out), scoop of steel cut oats for fiber and bulk. Blended smooooooth.
Bacon SPAM with sautéed garlic, onions, molasses baked pinto beans. Seasoned with dry roasted / ground coriander, cumin, smoked paprika, cayenne, black pepper. a favourite meal of @Twoody88

The start of a lamb stew Bought some HALAL , bone in , lamb stew chunks. Added fresh roasted / ground cumin, coriander, smoked paprika, onion powder, cayenne, black pepper and pink Himalayan salt. I ground very fresh and aromatic rosemary and thyme herbs and added them to the mix. Added Afghan KEFIR cultured yogurt and mixed well. Bagged up in a vacuum bag , sealed it . This mix will marinate for the next 48 hours. more to come in 48 hours!!!
Frying up some $12 CAD , thick cut hormone free, antibiotic free, acorn fed , double smoked bacon , and a fresh made chorizo sausage. bacon drained , cooled, vacuum sealed for a hike snack today or tomorrow pretzel Kaiser bun, with grainy French mustard, herb and garlic havarti cheese, and above mentioned bacon (second batch)
Dang it! My sausage,egg, cheese,and spinach on wheat did not look that good! It was homemade, it was wholesome, it was good…just not that absolutely delectable looking!!
Chicken Breast-polenta-acorn Squash by Kylemeister posted Sep 4, 2022 at 5:52 PM Chicken breast with a mushroom & stock pan sauce, creamy polenta & acorn squash sautee. Cooked the chicken in the pan for color, then into a 400F oven until it hit 165. I cheated on the polenta and cooked it for 2 hours at 185F sous vide, and it was AMAZING. Acorn squash was seasoned with cinnamon & nutmeg, and cooked in a healthy dose of butter.
