Another one I thought the queen might like.
    Parmesan Crusted Chicken and Vegetables.
Let have a stab at it eh?
    20210819_115112.jpg
This recipe actually started 2 weeks ago but getting broodettes off to college got in the way. (We'll call that extra marinating time.)

    20210827_201808.jpg
Mines nor going to be very just blah either.

    Assembly is easy.

    20210828_131413.jpg
And we're gonna toss the lot in a 425f oven for about 45 minutes.

OK, She's getting another dose of Quick n Dirty Gumbo. Not because I'm out of ideas, but because getting the budget and the end of the month to work harmoniously was challenging!

    20210831_140741.jpg
My Louisiana kin would be proud of the eye watering heat this mix has...

    20210901_153613.jpg
Maybe we should ask why store bought stock looks so....weak?!!

    20210901_153722.jpg
I went to the kitchen. There might be nibbles.

    20210902_135906.jpg
My friends, I can't even make "plain" rice.
The second I touch something My mind starts telling me how to fantastic it up!

    20210902_143742.jpg
I'm further convinced that before recipes like Gumbo, Irish Stew, ect, were codified and written down, they meant anything you could dig up, chop up, or whack with a stick and put in a pot! ( My Tx Mother had one called "Dishrag" that was made in a 17" cast iron skillet. )

Signs your cook might be slipping off the edge.

Hmmm, forgets to put on shoes...

    20210902_170141.jpg
This is a "make do". So some lost random pieces of breakfast sausage, lil chopped bacon, and 1 leftover chicken breast.

    20210902_170159.jpg
Ever trusting that I will let nothing drop that causes harm. Such faith.

    20210902_171331.jpg
    It's looking much better now...

Garlic, tomatoes, okra, corn...it's a quartet of delicious.

    20210902_172311.jpg

Onions, peppers, and a boon of carrots that were delivered...

    20210902_180633.jpg

A little roux, a little stock, a little simmer..

    20210902_180907.jpg

Some rice and this will put you in a good state. You might be sweaty but we're pirates...we won't care. :)

Today my friends I'm going to make something that's not in...a recipe book.
I give you, Braised Pork with apples. Done with an anrkst original take on taste.
    20210903_112844.jpg
This is going to be my braising sauce.
It's the end result of 2 weeks of research, testing, and pages of paper covered in weird indecipherable scribblings of a madman.

    20210903_114816.jpg
Buts it's good. The kind of "I need a straw" good.

    (Pause for effect..)

(Guys, my isp connection is having a mental breakdown apparently..no wind, rain ect but it's twitchy. Hang on.)

    20210904_114918.jpg
This needs some goodness. I wanted pumpkin but there was none, acorn squash substitute, (butternut next time) a good hard apple (honey crisp ) carrots and onions..

    20210904_121802.jpg
I know without looking down he's there. ;)

    20210904_122004.jpg
You could use whatever cut or type of meat you like. Pork, beef, lamb, even duck would be good. She likes trim clean and boneless...can do.

    20210904_123409.jpg
She thought this would be a debate sparking image.

I needed a way to Preheat this massive iron pot. To get a good sear on the meat..

    20210904_131802.jpg
It only sorta worked. The flame spread is too small I think. So the meat was a little less browned that I wanted..next time....

    20210904_133720.jpg
Then veg in, 3/4 cup chicken stock, 16 under, 20 top, about 400f-425f for 45 minutes ...

    (Another internet twitch...sheesh.)

    20210904_143711.jpg
Oh my. The smell alone is mind blowing.

    20210904_143839.jpg
This was a win. Not sweet but close.
The level on the pot sure went down fast!

This would be a good one to add to the holiday menu. It's different, unique. Not hard to do but they don't know that. :D

She came back from a shopping trip with a little bag of spices. ;) Now picture yourself as a spice merchant, in the ports of the Black Sea on the Turkish side in the age of Constantine...
This is Ras el Hanout. I built this recipe around it.
An anrkst creation, Chicken with Olives.

    20210907_192356.jpg
There were maybe 2 tablespoons in the original bag. I started digging and this light and flavorful blend is what resulted.

    20210910_195609.jpg
These need to be trimmed and prepped at least a day in advance..

    Resized_20210910_200917.jpeg
What kind of T Rex sized chickens do these come off of?!!

    27572237142366.jpeg
And because I can't make "plain" anything..the trim is going to be a super flavor upgrade stock. ;)

This will need some goodness, to fill in the gaps. Right?

    20210911_123423.jpg
This one..if I move, he is near. :)

    20210911_125546.jpg
This will result in social distancing..friends, neighbors,...vampires.

    20210911_135204.jpg
Weather's nice, we're back outside. Seasoning the oil up to the N'th degree..

    20210911_141312.jpg
Oops, I moved. There he is.
