“The Greeks don’t want no Freaks!!”

With the price of Roma tomatoes (and all others) being VERY EXPENSIVE here in Vancouver, one has to resort to cheaper means to make a great pasta sauce.

now I grew up in a predominantly Sicilian household - fresh is mandatory. Grandma would literally grow about 50 x 55 gallon drums worth of Roma tomatoes EVERY year, as well as about a 55 gallon drum worth of fresh basil .

she would make her own sauce, canning it and storing literally hundreds of jars a year in the root cellar dry storage racks.

For me to make fresh from scratch pasta sauce using Roma or other tomato’s right now , in the volume she made sauce , would cost me about $10,000 CAD alone in tomato’s . It’s insane up here. I inquired at a produce warehouse how much 5 cases (50 lbs each) of Roma tomatoes would cost me wholesale. $250 a case , or basically $4.50 a lb WHOLESALE

makes ME SICK . I grew up making pasta sauce from fresh Ingredients from the garden, for almost nothing but labour . I’d roast the tomato’s , grind them in a hand mill, chop the garlic, onions, herbs etc and let it simmer all day.,

So now I resort to extreme cost savings measures.

let’s start with 2 whole onions diced, plus 2 lbs of smashed garlic cloves . Sauté in EVOO.

add pilfered fresh rosemary , oregano, basil and thyme from the fancy West Side community gardens, 1/2 a cup finely minced each herb.

add a chub (about 2 lbs) of ground chorizo or Tuscan ground pork , ground beef etc (or all three)

Sauté / brown everything , add an entire tube of Nonna Pia concentrated tomato paste and mix well.

now the cheat - I use two large cans of Western Family 4 cheese pasta sauce ($3 CAD each) it’s one of the better off the shelf pre-made (locally) pasta sauce and it’s actually really really tasty.

mix well, rinse the cans out with water and add it to the pot. Mix well, simmer on low for a few hours , stirring often.

    IMG_2359.jpeg IMG_2360.jpeg IMG_2361.jpeg IMG_2363.jpeg

Simmer down to your desired thickness (I like THICC sauce) .

this big pot of sauce cost me a whopping $15 to make . $6 for the ground chorizo, $6 for two tins pasta sauce, $3 for 2 lbs peeled garlic cloves. Herbs were free .
