“Bits, Pieces, and Leftovers.” This is a budget worthy work up that uses the stuff left from other meal preps and last bits of produce that try to go bad in the refrigerator. It’s neither Gordon Ramsey’s Spicy Sausage & Rice or Paella but uses techniques from both. A couple of link sausages, some various ground meats, a few mushrooms, the last stalks of celery..and..Imagination. ( You just said that in your SpongeBob voice didn’t you? ) This one is like a mob boss. He just hangs out on the down low..waiting for his cut. Wasn’t hard really. It made a pan full too. Well. I’d call that a winner huh?!
I decided to do a stock experiment. I chopped up a good bunch of deer and pork bones which I oven roasted along with some whole yellow onions. Then they were cooked down in a stock pot with seasoning and about a tablespoon of apple cider vinegar reducing 5 qts to 3. This produced a thick, almost viscous, poultry gravy like substance that was wonderfully aromatic and delicious. It’s that time of year, people with the sniffles, you hear coughing..can’t hardly be avoided. So I gathered some ingredients.. Set a timer for 7 hours, and go about your day. Go to the gym, clean the house, play with the dog, all while your lungs get filled with a smoky pleasant sensation. This will cure those things that try to getcha. Best not to wait though, She’s going back for more already.
Hmm. “The Great British Baking Show.” The disaster episode. It’s a fun little show that we enjoy. Herself asked for this and I like trying interesting stuff. Classic British Sausage Rolls. First I consider how I want the taste. That gives me an idea of what spices I want. This part I’m good at! I decided mine would be kind of “egg roll” in texture. I’ll give these a quick sauté in a bit of butter first. (There are raisins in it too but I got involved in the process and forgot to put them in the picture. ) The finishing touch on my vegetation is a tablespoon each of these. It will leave just a hint of smoky sweetness but it also tames the bitey edge you get from freshly ground black pepper. This is where disaster enters the scene. I need a gluten free dough to roll around my sausage mix….

Oven pan seared cubed Chuck, onions, loads of garlic, leeks, fresh ground black pepper, cumin, coriander, smoked paprika , black cumin, fennel seed, Himalayan salt, ground sage, bay leaves…. 2 lbs Sicilian spiced whole green olives , 1 lb baby yellow flesh potato’s I wish you could all smell the intense amazing aromas in my apt right now

Smash Burgers, er…..Potatoes get a bag of the yellow flesh baby spud, boil briefly to soften. heat a fry pan and grease it with olive oil. Gently press the potato’s with a jar bottom (oil it) and transfer the smashed potatoes to a hot well oiled cast iron pan GENEROUSLY season with Himalayan pink salt, garlic / onion powder, coriander and smoked Hungarian paprika Roast until crispy on the bottom, then flip em over and roast until the other side is crispy.
