In trying to eat better and more vegetables, I bought a vegan cook book I've been looking at for a while. First attempt was tortilla soup. It was REALLY good. We'll be having it again, no doubt. And there's a buffalo cauliflower taco recipe in really wanting to try a well. Don't be concerned, I'm not straying from the ways of smoked meats, but I need to work on my overall diet.
Some of you overland types like myself should be familiar with the Scottle, more widely known as a discata. My buddy Sean and I were talking about them and I mentioned that they're just plow discs. Next thing I know he's got 6 discs ordered! We finally got a bunch of us together to fab them up this weekend. They turned out pretty good I think. We tried one out over my little gas burner then switched to the Weber to finish it off. Gonna have to get a bigger Coleman. My 400 backpack stove just ain't got the chooch to keep up with that disc.
Thick cut chop pan seared in olive oil then basted with butter, fresh thyme, freshly squeezed orange juice and blackberry brandy, then finished off in the oven and topped with grilled onions and a fresh orange slice. Homemade mashed potatoes and pork n beans.
First time making chili and it came out really good. I used ground turkey and turkey sausage to keep it on the healthy.
