    My wife and I were successful at Beef Wellington.
    Nice to see that we weren't the only ones to pull it off in this group.
    It is a lot of work for something that is okay.

    First go at roasting a rack of lamb. Impulse buy at Costco.

    Did a mustard glaze on the lamb, with balsamic vinegar, rosemary, tarragon, and thyme. Let sit for 1 hour, then into a 450 degree oven for 25 minutes. Rest 10 minutes then slice. Did a gratin Dauphinois & honey glazed carrots to go with. Whipped up a pan sauce with chicken stock, shallots, more fresh herbs, balsamic & tarragon vinegar that hit all the right notes.

    Some free scallops from work, farm cherry tomatoes & fingerings and local greens dressed. Needs sauce, but the price was right.

    Only sauce you need for that is a browned butter sauce (beurre noisette). I wanted to do scallops last weekend, but I'm not paying $30+ per pound for scallops.

    Wife left me to fend for myself with breakfast this morning. It'll be an open face egg delight.
    From bottom to top will be....
    Toasted rye bread.
    Brisket in a homemade spicy sauce using an organic ketchup base.
    3 eggs with pastrami bits and country fried red skin potatoes.
    Melt in your mouth yellow onions.
    Melted swiss cheese.
    The rye, brisket and pastrami are from Katz's Deli in NYC.

    I got an awesome electric grill and haven't had better fish so far.

    The fish is Sea Bream (we call it Tsipura).

    They are filled with a mixture of garlic, fresh dill, salt and olive oil - both in the belly and on both sides of the spine - so the spices can do their trick on all of the meat. The 119 is one mean fish ripper.
