I still feel like s***, so I'm having chicken soup. Sauté some diced onion and garlic, add 12 cups of water, salt, 2 bay leaves, thyme, and chicken legs. Boil for an hour then check if it needs salt. Boil for 1/2 hour, then add celery, carrots, and a diced pepper (I'm partial to Thai chilis) and boil for 30-45 minutes longer.
Bought some pork shoulder blade steaks as a treat for our boxer. Cost me a whopping. $2.48/lb. Dog wasn't going to be able to eat them all before they went bad so I decided to use some for a random dinner along with a spaghetti squash from the garden. Blackened seasoning, pan fried and finished in the oven. Magnificent. The ribeye of the pork world. Juicy and tender beyond belief. If someone served me this and told me it was pork I would not believe them. Toasted onion, garlic, mushroom, tomato, and cream sauce that was the result of throwing a bunch of random ingredients together.
The other night had me frying up a chicken breast that was soaking in lemon and black pepper. Once done I diced that up. Fried up some baby spinach in olive oil until it was crispy and sprinkled it with salt. Toasted up some pine nuts and then added diced garlic and diced mixed olives. All of that went together with some veggie pasta.

Country boil, Bushman style. Inspired by Expats Can Cooker over in his forum section. Used my SCAR knives Hawkeye for the food prep, and a 8 quart Dutch oven for this one. Nice hot chorizo Sauteing the zukes and green peppers to get a nice char. Layering corn in the Dutch oven The start of over a cup of garlic.... Chunked red spuds and Spanish onions, garlic and 3/4 bottle white wine.... Added chorizo, cayenne pepper, smoked paprika, sea salt , coriander and cumin. Topped it off with lemon juice, stick of salted butter, and mussels. Then put the lid on and let er boil. Butter.......mmmmm It was awesome.
BASA ( Pangasius bocourti ) fillets pan fried, with sauted spinach and garlic. Didn't have the pan hot enough nor the oil hot enough......the fillets kinda fell apart and were not as crispy as I like. Still, super cheap dinner ($5 cdn) and pretty tasty.
El Diablo Sheep Egg Frittata Green peppers , Thai chilies, Russian hot garlic, Benchmade Bedlam Hot Lodge 12" steel skillet, with EVOO and the veggies. Sheep Eggs Aged cheddar slabs 5 min under the broiler And YUM!
Breakfast. Cheesy Grits Casserole 6 cups prepared grits, 10 Oz cheese (I used Mexican), huge yellow onion, 4 Anaheim peppers, 1 lb spicy pork sausage, salt pepper and some savory herbs. Everything except the cheese gets cooked before it goes in. Well stirred together and ready to go into the baking dish. Needed 35 min for proper browned cheesy goodness. Is ready to eat at any point, but I like the toasty cheese. Can be sliced like a loaf of bread once it's semi cooled. Can also be pan fried for more crispy bits once it's slicable. Great way to have a ready to eat breakfasts for a few days with minimal effort. Also a great way to stretch a pound of sausage into a bunch of servings and a favorite of most who try it.
