    This, is a Kent Rollins recipe. I watched him make it in a video about a week ago. Only one problem, I ain’t got a clue what it was he called it! Lol!

    First you’ll need some kickin spices. Let’s start with an eyeball measurement of these.

    You’ll need some fill it out, and for sure some dried chilies.

    Now get a little sauté going in your cast iron skillet..

    Then add in some tomato paste, and those dried chilies ground up and soaked for a bit in some beef bouillon. Let’s it simmer low like and reduce for about 15 minutes.

    Next you’ll want some corn tortillas. Cut up, couple pats of butter, sprinkle with your spices. Get em good n toasty.

    Next you’ll need some sausage patties. These are from our feral hog hunting trips..Bout 3 times more spice heat than the hot version you see in the supermarket. ;)

    There’s just a bit of assembly, then you toss it in a 400f oven for a bit…

    Jalapeños get de-seeded and seared in a little butter. Lessens the heat and brings in a nice roasted flavor.

    Then I’m gonna bring out the 50 year old mostly wore out grinder. I’m going to use huge amounts of spices (as evidenced by the now empty bottles)…I also sent thru about a pound of super spicy feral pig sausage, as well as 2 extra lean handmade smash burger patties I found lost in the freezer.

    And some savory stuff, and dried chilies. A lot of them!

    Then I worked up some nearly dirt colored pork stock. Starting with 6 quarts and cooking it down to 3 quarts.
    Then all this stuff goes in the refrigerator, so it can sit overnight and drown in all those aromatic spices.

    Then I’m going to get up at an unholy early hour for a Saturday, and use a gigantic 14” Carbon Steel skillet to speed sear and brown the meatballs. While that was happening I brought 2 cups of the stock up to a boil and dropped in my diced dry chilies. This is used to deglaze the skillet before the meatballs are added to this 8 quart potjie..

    Then there’s a long…slow…agonizing 8 hour cook time at at measly 250F!
    at the very very end I pan roasted a mountain of hacked up corn tortillas, with even more spices, and real butter!

    Now if this don’t put some giddy up in ya…you is already dead! And therefore won’t be wantin any of my meatball soup no how! HA!

    I’d eat the stuff you cook every day! I get bored with the stereotypical local creole/cajun food, so I get really intrigued seeing folks cooking with lots of spices while being very different types of dishes.

    That’d be awesome! I wondered if you were that far east, My wife’s family is from the Mitchell/Converse La area in Sabine parish. I started hunting up there last year on a more permanent basis with her uncle and cousins. I live just south west of New Orleans in Houma. I love it in that area around Toledo Bend, that’s some of the prettiest wooded hills and thickets I’ve been in.

    Converse is almost directly across the rez from me. Logansport is 15 minutes from here. we’re practically neighbors. The time lapse is because you have to drive up one side of the water and down the other!
