Here's a quick breakdown for my northern brethren: NC: Ketchup-based BBQ (Western) or Vinegar Based (Eastern) SC: Mustard-based AL: Mayonaise-based Texas, Kansas City, Memphis, etc.--I have no idea what those people do; that's not real bbq anyway.
Although that did give me an idea to try the white sauce on pasta just to see. I bet with some blackened shrimp thrown in and a couple of chunks of italian sausage, that would make a heck of a good dish.
