Culinary Goodness

    After an unusually warm spell, it's back in the 20's with winds and flurries so it's chili time. This could be called a stew maybe. I don't know. It's chicken chili but not white chicken chili, which is popular in the midwest but I'm not a huge fan.

    First, the cleaver gets busy. Short work of all this:

    Into the cast iron dutch oven (the high-dollar cast iron dutch oven)

    Cook in some oil until the onions are soft, then add everything else and all the spices:

    Then some crushed tomatoes. And let everything boil and then simmer together, mixing up the goodness.

    Next, comes the best part. Get out in the freezing cold and grill up a bunch of chicken. Chop it up with your favorite Expat Knives Cleaver and add to the stew/chili/whatever.

    Let all that simmer for awhile and enjoy with some chopped onions on top, shredded cheese, or both. And a side of cornbread---those pics are forthcoming.

    Venison tacos. No recipe and I really don't know how to cook but damn this ground meat seems ideal for this sort thing... virtually no fat.

    My wife wanted "I don't care" for supper. Therefore we are eating Stouffers lasagna. I'm sick of getting no input from the wife. It's a cop out meal but I have a raging hangover.

    I see two types of capsicum (red and yellow), carrots garlic and two types of onion (purple and white ??). I can't make out the rest of the spices and such (I recognize the REH seasoning and black pepper I think)..... details man !!! It is 103F here today so I probably wont cook it tonight but that concoction catches my eye !!!

    I didn't use all of the spices in the containers. Here's what I put in it:

    4 bell peppers. You must call those capsicums. Not speaking Austrian or German, I don't know. In the U.S., capsicum is what you spray in people's eyes here.

    3 onions (one was red/purple)
    4 cloves of garlic minced
    2 carrots chopped
    Spices: 1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon cayenne, 2 teaspoons of salt, 1/2 teaspoon of red pepper flakes, 2 teaspoons of basil, all the @RedEyedHog you want to add. I just throw a bunch in.




    onions in olive oil until translucent (about 10-15 min)
    add garlic for one minute
    add peppers, carrots, and spices
    Add 56 oz of crushed tomatoes

    Let all that simmer for about 30 minutes after it boils. Taste it to see if you need to add more salt, more heat, whatever. You can't really screw that up.

    While that's going on, salt and red eye hog the crap out of the chicken breasts and grill them on highest heat available. I go around 550 degrees on my grill. The reason is, I like the crust on the outside which stays even in the liquid. Don't dry the chicken out but even if you do, it'll end up in the liquid so it won't be too dry but try to avoid it.

    I had this earlier today for lunch. I work around the corner from a food stall and the old lady cooks all kinds of stuff but I keep coming back for this. Yum. I'll miss Thai food when I move back to the states.
    So many great pics of food here. I am hungry.

    ..... brilliant !!! Yes Capsicum = Bell Pepper as for a "Bell Pepper" here and they will look at you funny.

    Used Cat Cora's cornbread recipe and it was pretty good.

    BJ's had some insanely low prices on meat so I grabbed about 25lbs mixed beef, chicken, and pork. 9lbs of skirt steaks because at a local supermarket today it was $16/lb, BJ's had them (looking better) for $5.79/lb. The big supermarket had boneless chicken breast for $2.49/lb, I got it for$1.69. Couldn't beat it.
