Its been a very buggy spring so far, which can make it difficult to cook but maybe the wind will help today.

Did you know canned Cream of Chicken has wheat flour in it? I didn’t. For hers I’m going to try to make my own. It’s a first. I’ve never even considered it before…

For this recipe we want this just almost done. You could even do it a day in advance if you wanted…

    FB38674F-2806-4403-A117-CB259DA65732.jpeg
Then a quick steam on the fresh vegetables. About 5-6 minutes is enough. I used about 1 tablespoon of real butter and liberal amounts of my own Savory seasoning blend…

    E9E147F0-69E6-48FE-B7DD-02BA2D73637E.jpeg
Next the canned vegetables, more seasoning, keep the lid on and low heat. You just want to heat them and use the inherent water to deglaze the pan…

Kill the fire for now..Now we need to shred out the chicken pieces. (This was my grandma’s roaster pan, then my Mothers, now mine. Things got to be 60-70 years old at this point.)

    488BB738-DA56-4F7D-82E6-3B563F46E367.jpeg
Then I need to pop in the house to make a top crust. (Also gluten free) Then sauce in, chicken, 1 tablespoon of worstershire, and 1 tablespoon each of feta and Parmesan cheese. (I used feta because she likes it, you could just use Parmesan. It gives a nice flavor add. ;) ) Top crust (doesn’t have to be neat) brush with butter and a lite sprinkle of seasoning…

    5E18EBDD-6CE5-4D08-A534-A49F74D3504E.jpeg
The over to Station 2, which needs a roof because it keeps trying to sprinkle. I went 400f and about 45 minutes…

It is definitely getting into the “buggy hot” season down here, sticky humidity and lots of snakes moving about. :)
Would you believe I made this up completely in my head on Monday? Just a nice not too heavy Chicken & Brown Rice Soup….

    D3913EBB-11E0-43DA-8C44-771CEEC7B78D.jpeg

I’m going to use seasoning salt to “sweat” these mushrooms and balsamic vinegar for a rich earthy taste sensation..

How muggy is it? So hot Daisy girl has melted in a pile of skin and bones in the floor….Oh wait…
(We could make soup out of her but I bet it would be nasssssty. ;). )

Meanwhile Sid ( All hail the Chicken god!!) has taken refuge under the table…
