The Poulet in this recipe. (This is where I wish I had my own chickens...they would NOT look like this.)

20 minutes very low, turning every 5

A feastage worthy of the mighty one. ;)

She says we should have torchlight, furry boots, and horned helmets for this....I might tend to agree. :)

Random crazy quotes that get stuck in your head...

So she asked me if I could do something she really likes but cant normally have.

    20210401_101351.jpg
Just like anything else, lay it out so you can "see" what your goal is.

    20210401_164140.jpg
Personally I think things are better with garlic, bacon, and sun dried tomatoes

    20210401_163424.jpg
And I dont like the flat top. Poor heat control.

    20210401_163940.jpg
He's always there. So I am very careful not to spill a single smoking drop.

..abashed the devil stood...and felt how awful ...goodness was.

Chicken Spaghetti, (low lactose and gluten free) to the extreme! :D

Here now, set before us is a feasting so that we can live...like the mighty kings of old!!

French Onion Chicken, Sauteed Vegetables, and Garlic Mashed Potatoes
    20210410_091930.jpg
Trying out a new funsie today. I've had an itch for a multi purpose cleaver, something not quite a Chinese vegetable cleaver but not quite an American battle axe either. ;) 7" blade, 12 1/4"oal, 3/32" thick, and 2 3/4" wide for you specs junkies.
    20210410_093454.jpg
Full disclosure, it arrived about a sharp as the proverbial brick. I took the Worksharp to it and finished on ceramic.
Its...different, but ingrained technique takes over and works flawlessly.
    20210410_094430.jpg
For French onion you want them good n brown
    20210410_094500.jpg
and this to make it dark n rich...

Turnips. Yes turnips. Add a few to your mashed potatoes for a unique almost buttery flavor.

    20210410_131042.jpg
And giving then a second rinse removes excess starch, makes them fluffier, smoother when served

    20210410_135914.jpg
I just really like my sauteed vegetables

    20210410_140308.jpg
I decided to restructure my outside cook station. Give it more capability and more user friendly...

So what's better than seasoned boneless skinless chicken thighs?

    20210410_142301.jpg
Seasoned boneless skinless chicken thighs in a smoking hot cast iron pan of course!

    20210410_144021.jpg
Just give a good sear on both sides, the push them under that savory onion soup you made

    20210410_145735.jpg
Then bake them around 300f for 45-50 minutes

    20210410_152627.jpg
Remember those garlic cloves in the chicken sear? Now we're gonna mash them and blend them into the cooked and drained potatoes (along with butter, milk, spices, and parmesan!)

    20210410_155027.jpg
Now this is the table of royalty...as long as your idea of royalty is horned helmet axe wielding longboat raiders anyway!! :D

That was my Saturday...what about yours?

"Stepping outside". Sometimes I think a person ought to try something outside the comfort zone, something they're not good at, maybe even something they're not sure will work. This is one of those.

Asian Pork Dumplings. Gluten free for my queen...

    20210415_113117.jpg
Well she may not want the wheat but she do like the spicy..

    20210415_120258.jpg
Here we go, cold pork=cold pan..

    20210415_121935.jpg
Starting to smell kinda righteous in here..

Trying a new idea to try and contain my..."disasters "....

    20210415_133306.jpg
and there he is...asleep underfoot as usual. :)

    20210415_143504.jpg
These are looking kinda rough...I'm not a good bread guy and the gluten free dough, its crumbly. Feels like its fighting me..

Oh well, They are goin in the carbon steel anyway! (We can always go out for pizza if I blow this right?)

    20210415_181704.jpg
Nah, She said they were delicious. Thats good enough for me. I used chicken bouillon instead of water for the steaming (richer taste) and I think I know how to "fix" the dough next time....next time yeah.... ;)

I did,. It was just soy, fish sauce, crushed ginger, a couple drops lemon juice, and a pinch of brown sugar and cayenne. Simple but really good.
