It’s the ever evolving outdoor kitchen...it definitely time for a roll around toolbox to carry it though,

    Something Christmasy for yall,

    20201222_154628.jpg
Brussel sprouts, garlic, onions, and a cup each of pecan pieces and dried cranberries. (Theres a container with a 1/4 lb of chopped bacon and some spicy link sausage here somewhere)
    20201222_161851.jpg
Slice up the fresh ingredients and put in a oven safe pan with the meat, bake 40 minutes at 400f stirring 2-3 times..
    20201222_164730.jpg
While its cooking, make a balsamic reduction. 1/4 cup each of balsamic vinegar white wine, soy, tablespoon of honey,1 of brown sugar, teaspoon of lemon and sesame oil. Simmer to reduce by half, then a teaspoon of corn starch, stir in and remove from heat.

When the bacon is crispy and sprouts soft, add pecans and cranberries, pour the reduction over it and send it back in the oven for 5 minutes...
20201222_173009.jpg a mildly sweet tangy dish, good by itself or as a compliment to Turkey, duck,or venison.

So many ways you can play with this, use dehydrated mandarin oranges, English or black walnuts and brandy or spiced rum in your sauce...Crimey, Now I’m hungry again!

New Year? Yeah...it was pouring rain for 48 continuous hours. Well then that's why we have walls and a roof...and an oven!
    20201231_173331.jpg
It was going to be a Kent Rollins recipe. Well at least until the knives came out..

    20201231_191235.jpg
Then garlic cooked in butter, and chunky sauce, and about a pound of mozzarella happened...

    20201231_191347.jpg
Baked Spaghetti yall. So good even my picky eater daughters ate it.

I used 2 whole marinated pork loins. (Bacon and apple marinade)

    20210109_142935.jpg
Parsnips, carrots, red and green onions, and squash. (My local store has a limited variety, acorn squash, pumpkin or some red potatoes might be good too.)

    20210109_151112.jpg
Bring out the big iron. :) a quick sear on each side. Maybe 3 minutes, just enough to seal it, then pull and rest...

Then the whole mess of vegetables, about 5 minutes with some butter, evoo, and those spices from earlier...

    20210109_161644.jpg
Nest the meat in, add your chicken broth, and punch the heat up. The recipe said 425f for 45 minutes. Mine went 35 with 20 under and 15 up top. With 5 minutes left top with your apricot mix and a 1/8 cup of almond slivers..

    20210109_164048.jpg
A smokey taste of the border where Italian or French is likely to be spoken. :)
