CUTCO Fisherman's Solution, been using one for many years for saltwater fishing, and processing deer and wild hogs during hunting season. Has adjustable 6" - 9" flexible blade, and they sell replacement blades for it. Comes in a very nice heavy duty plastic sheath that can be used to grip the lip of fish while filleting; also has a sharpening stone on the back.
I've always had decent luck with the rapala fillet knives. KOA steelheader if you want a nice 440 blade. If I'm walleye or pan fishing I'll use an electric knife. This little guy just came out not long ago. I'll be trying it out this fall on a pile of fish to see how she holds up. For 30 bucks it'll be a cheapish experiment.

You know it! I've been wanting to make one for years. An heirloom quality one. One you use with your kids when they're young. And then they use it with their kids and tell stories about the good ol days.
....that is actually my "Bird and Trout Knife" ... and my slicing knife... Its funny.....I do not actually own a traditionally styled fillet knife. Ohhhhhhhh.......an excuse to buy a new knife just appeared before me.....
I was just talking good about you and there you go posting pictures of those silly Buses knives. You know knife quality has improved tremendously--you don't have to be handicapped by those things anymore.
