Received my ESEE/Becker kitchen set yesterday - it really is a great set! I was surprised how nimble they feel in-hand, very lightweight, handles are small enough to get a complete wrap in any position, and the grip is fantastic! My g/f is pretty impressed with them as well, and was intrigued to hear the "story" about Ethan's background, since she, as most any home-cook, loves "The Joy of Cooking" as a staple in the kitchen. This was the first time I got to include her directly in my obsession/hobby of knife collecting. She has gotten pretty desensitized to me getting a new knife and parading around like a child with my new pointy-things, or finding an excuse to cut/chop things for no good reason...so it was nice to see her get excited about the new purchase, for once!
My wife ordered herself a damascus Kershaw Skyline last night. She saw the price of a small 21 and decided the Skyline is better lol

Great choice - I love the Skyline! My only suggestion is to grind out a better transition "thumb-ramp" to make it easier to use the thumb stud. My fat fingers had a hard flicking that little thing open.
That's literally how it starts lol. You see what's at the top, drool for a minute, then check the price tag. Then you go a few rungs down and decide you're comfortable there. Then...you slowly work your way back to that top item because you were never satisfied with the middle of the road to begin with. It's how I've ended up with Leupold optics, a Superduty and various different CRKs, Striders and RHK's.
I'm the opposite. I get sucked in with the 'base model' / lower end price point stuff and then keep looking around and researching stuff... trying to figure out what I can get for 'just a little bit' more.
As purdy as damascus is, it's as overrated as S35VN is, for how it actually performs relative to other quality steels. That's not to say I don't enjoy the eye candy. But, unfortunately, we all live in the era of gratuitous hyperbole.
I ordered 1 set and the next morning ordered another for a friend. Mine came this week and I wish I had ordered a 3rd, they are great. Also came a lot sharper than some of the more expensive kitchen knives I own.
