    I like the Frost by Morakniv. Inexpensive and has decent edge retention.

    Moras are great, also I have a Cold Steel filet knife from their kitchen series - love it!

    I like both of those things. Edge retention is one thing that the cheap dime store ones just dont have.

    If you can find the old Moras - made by Frosts, they are much better than the newer ones "Mora of Sweden", the older ones really used 12C27 for the stainless and they hold an edge quite good. The steel of the newer ones is softer for sure.

    The CS kitchen knives are awesome - I also have a chef knife from them. I usually hate 4116, but in the kitchen knives it is actually good and they are so thin ground that they cut even when they are slightly dull. I touch them twice per year with a Makita stone and it is enough for my use.

    Dexter boning knives. Comfortable, inexpensive, several blade options, made in the USA and work great.

    I may be the odd one out... But I personally prefer a electric fillet knife... The number of perch I used to catch I would spend longer cleaning then I did fishing without it so it was a must!..
    For a non electric, I have oddly good lucky with the $15 ish dollar wooden handled knives. I believe there called “Fish’n fillet knife”..

    Marttini fillet knives. Rapala has one under their brand as well. My favorite personally. Great ergos, and around $20+/-
