The Three Pounder You'll need: - large cast iron (only) pan. 12-16" size - onions, 3 large ones - garlic, 2 large bulbs. Yes whole bulbs - butter, real salted butter. 1lb - 4 to 6 eggs, large - bread, lots , whatever you like - cheese , preferably aged cheddar - 1/2 a large carrot , chopped fine Heat your cast iron pan slowly, on MIN. Pour a beer for yourself. Put 1/2 lb of butter into the pan and melt it. Add all the thin sliced onions and carrots. Low and slow saute here.......let the flavours develop. After about half an hour of making the neighborhood smell amazing, up the heat and add the garlic. Slightly crisp the onions and brown the garlic. Transfer to warm pan for holding. Add the rest of the butter to the hot large pan and crisp the bread into croutons , softer not hard. Beat the eggs and drop into the pan . Add cheese, and top with the onion garlic carrot saute. Fold over the eggs onto the saute . Eat. Pics loading
